Americans love our spuds
Potatoes are a serious staple in kitchens around the world! Here in the United States, we each consume an average of 110 pounds of potatoes per year. We love potatoes’ versatility and nutritious flavor profile (for example, did you know that potatoes are packed with potassium, vitamin C and even a moderate amount of iron?).
A world pre-potatoes
Can you imagine a world without potatoes – or at least, without some of our favorite methods of enjoying them, like French fries and mashed potatoes? We certainly can’t! However, these popular forms of spuds are (relatively speaking) somewhat new to the world culinary scene. After being introduced to Europe from their native South America, potatoes first appeared in mashed form in the 1747 cookbook, Hannah Glasse’s The Art of Cookery. And it wasn’t until the late 1700s that French fries were sold by street vendors in Paris!
The perfect potato for the job
When whipping up potatoes at home, be sure to pick the right spud for the task at hand. Waxy potatoes like reds, for example, work great in a potato salad or smash (they keep their shape well in the cooking process). Starchier Russets and Yukon Golds are popular all-purpose picks, with the latter being especially delicious for creamy, buttery mashed potatoes.
Tip: Parboiling potatoes make cooking easier
While you will want to boil your potatoes as normal before mashing, a shorter boil (a.k.a. parboil) is a helpful first step for many other recipes. Boil your potatoes for about five minutes and be sure to rinse well before cooking up into stovetop home fries or roasting in the oven. This way, you can achieve a soft, creamy interior and just-crisp-enough exterior.
